In the heart of the Oltrepò Pavese, the municipality of Fortunago guards a precious gastronomic treasure: the White Truffle. This prized tuber not only represents one of the area‘s culinary excellences, but is also the symbol of a thousand-year-old tradition that intertwines nature, history and culture.

The Territory and Ideal Conditions

Fortunago, with its calcareous soil and climatic peculiarities, offers the perfect habitat for the growth of the White Truffle. The soil conditions, characterised by good aeration and drainage, are fundamental for the development of this tuber. But it is not only the soil that plays a key role: the plants that inhabit these places are equally crucial.

Oaks, hazels, willows, holm oaks and poplars are the main tree varieties under whose foliage the precious truffle hides. These plants, through a complex relationship of mycorrhizal symbiosis, provide the truffle with the necessary nutrients for its growth, contributing to its quality and unique flavour.

Denominazione Comunale (De. Co.): A Recognition of Preciousness

The Fortunago White Truffle has been awarded the Denominazione Comunale (De. Co.) mark, a recognition that protects the origin and identity of this product. This mark guarantees that the truffle harvested comes exclusively from the lands of the Municipality of Fortunago, ensuring the consumer an authentic, high quality product.

Characteristics and Unique Flavour

The Fortunago White Truffle is distinguished by its light colour, ranging from cream to straw yellow, and by its oval or rounded shape. Its intense and penetrating aroma, combined with a delicate but persistent flavour, makes it a highly appreciated ingredient, although it is not suitable for all palates. The taste of White Truffle is indeed complex and rich, with notes reminiscent of honey, dried hay and mushrooms.

Use in the kitchen

In the kitchen, the Fortunago White Truffle is a true protagonist, capable of elevating every dish to which it is added. Its use is mainly in the preparation of first courses such as risottos, tagliolini and soups. However, the white truffle can also be used in main courses and side dishes, such as fried eggs and vegetables, where it is often served thinly sliced or grated.

Events and Food and Wine Tourism

Fortunago is not only the place of origin of the White Truffle, but also a popular destination for truffle and good food lovers. Every year, the municipality organises events and manifestations dedicated to this precious tuber, attracting visitors from all over Italy and beyond. Truffle fairs, with tastings and markets, are unmissable occasions to discover and appreciate all the nuances of the Fortunago White Truffle.
