The world of wine is full of fascinating stories and centuries-old traditions, but few territories can boast the cultural richness and oenological quality of Oltrepò Pavese. Among the many excellences of this area, the production of Metodo Classico sparkling wine stands out, a refined technique that gives elegant bubbles and complex flavours.

The Origins of the Classic Method in Oltrepò Pavese

The Oltrepò Pavese sparkling wine tradition has deep roots, dating back to 1870, when engineer Domenico Mazza of Codevilla began producing what was then known as ‘Champagne‘ d‘Oltrepò. Using Pinot Noir grapes, Mazza laid the foundations for a tradition that would flourish over the following decades. In the 1930s, the La Versa winery gave further impetus to the production of high-quality sparkling wines, consolidating the reputation of the Oltrepò as a territory of excellence for sparkling wines.

The Classic Method Varieties

The Oltrepò Pavese Metodo Classico is distinguished in four main versions, each with unique characteristics that enhance its peculiarities.

1.         Oltrepò Metodo Classico

2.         Oltrepò Metodo Classico Pinot Nero

3.         Oltrepò Metodo Classico Rosé

4.         Oltrepò Metodo Classico Pinot Nero Rosé

These variants differ mainly in the grapes used and the aromatic and taste nuances they offer.

Grapes and Characteristics

Oltrepò Metodo Classico and Oltrepò Metodo Classico Rosé

These two sparkling wines have a grape composition with a minimum of 70% Pinot Noir, supplemented by Chardonnay, Pinot Grigio and Pinot Blanc up to a maximum of 30%. The result is a straw-coloured wine with more or less orange reflections. The bouquet is characterised by notes of yeast from bottle fermentation, which blend with fresh, fruity aromas. On the palate, these wines are savoury, with a good structure and a harmony that makes them particularly pleasant.

Oltrepò Metodo Classico Pinot Nero and Oltrepò Metodo Classico Pinot Nero Rosé

In these versions, the percentage of Pinot Noir rises to 85%, with a maximum of 15% Chardonnay, Pinot Grigio and Pinot Blanc. These sparkling wines are characterised by their aromatic complexity and greater intensity of flavour. The yeasty aroma is particularly pleasant and persistent, accompanied by fruity and floral notes. On the palate, these wines are fresh, harmonious and with a robust structure that makes them ideal to accompany a wide range of dishes.
