The golden touch of saffron is not only an explosion of flavour, but also an elixir of well-being that envelops our bodies with silent benefits.

Saffron, the jewel among spices here in the Oltrepò Pavese area, is not only a protagonist in the kitchen, but also reveals valuable virtues for health. Originally from Asia, extracted from the flowers of Crocus sativus, this ingredient is fascinating for its vibrant colour and the rich flavour it gives to dishes.
As well as being the ideal companion to yellow risotto, saffron lends itself to a vast culinary repertoire, enriching flavours and aromas in surprising ways. However, its value goes far beyond the gastronomic sphere.
Saffron‘s antioxidant properties play a crucial role in counteracting free radical damage, protecting the metabolism and benefiting various organs. Its antioxidant action is particularly significant in reducing oxidative stress, a key element in neurodegenerative diseases. 
Numerous studies suggest that saffron may act as an ally against anxiety, improving mood and contributing to quality sleep. Its positive effects are also said to extend to the sphere of depression, offering support in the post-partum phase.
But saffron‘s virtues do not stop there. Its ability to reduce inflammation may offer relief to those suffering from gastrointestinal disorders such as gastric ulcer and irritable bowel syndrome. 
From a metabolic point of view, on the other hand, saffron seems to have a positive impact on blood glucose, promoting improved insulin levels and reducing glycated haemoglobin. Not least are the cardiovascular benefits, with saffron helping to balance the ratio of ‘bad‘ to ‘good‘ cholesterol in the blood.
It should be noted that, like any active ingredient, saffron requires moderation; it is essential to consider it as part of a balanced diet. All in all, saffron, with its colour and beneficial properties, is confirmed as a treasure to be appreciated not only in recipes, but also to promote the general wellbeing of the body.
