In the heart of the Oltrepò Pavese area, the Bianchi family has created an authentic wonder, Cascina Giulia. A place where the bond with the land is poetry and their passion and dedication are the thread that binds their every day.
Among other things, this family is also involved in cheese production, which has allowed them to give life to Feio, a special cheese born from the creative mind of Mr Attilio Bianchi. This cheese represents the synthesis of a burning desire: to create something unique, both in taste and form. The idea was clear: to allow the cheese to dry slowly, thus capturing every aroma and flavour that would otherwise be lost, finding a way to do this with a special technique.
The breakthrough came with the use of gut, an enlightening intuition that proved to be right from the first attempt. Feio, named in honour of the village that welcomed the Bianchi family to this area, is made with cow‘s milk exclusively from the upper Staffora Valley, from cattle fed on wild herbs from the lush pastures of the Oltrepò Pavese. But the magic happens thanks to the unique aroma of the Oltrepò Pavese saffron.
This cheese expresses its character at its best between the third and fourth month of ripening. The flavour is delicate and, at the same time, unique thanks to three key components: saffron, which not only gives it a special colour but also transforms the entire product; the slow drying process, which captures the scents of the pastures of the upper Staffora Valley; and finally, the casing, which adds a mysterious and irresistible touch.
This cheese pairs beautifully with many local wines, including bubbles, making each tasting an extraordinary and unforgettable experience.
